Our shop is not far from the old Chicago Stockyards. Although it has been closed for almost two decades (our last local meat processor just announced they're leaving), the environmental damage it caused lingers. In our community, the legacy of this heavy meat processing takes the form of the south branch of the Chicago River canal the locals nick named "Bubbly Creek". On a hot summer day, it bubbles still.
